On the way to Dublin, we’ll stop and have a private guided tour of ‘The Rock of Cashel’. According to local mythology, the Rock of Cashel originated in the Devil's Bit, a mountain 20 miles (30 km) north of Cashel when St. Patrick banished Satan from a cave, resulting in the Rock's landing in Cashel. Cashel is reputed to be the site of the conversion of the King of Munster by St. Patrick in the 5th century. The Rock of Cashel was the traditional seat of the kings of Munster for several hundred years prior to the Norman invasion. In 1101, the King of Munster, Muirchertach Ua Briain, donated his fortress on the Rock to the Church. The picturesque complex has a character of its own and is one of the most remarkable collections of Celtic art and medieval architecture to be found anywhere in Europe. Few remnants of the early structures survive; the majority of buildings on the current site date from the 12th and 13th centuries. In Dublin, you will tour ‘The Guinness Storehouse’. Guinness is the most visited tourist attraction in Dublin. You will learn the history of how this Irish drink was made, marketed, and why it was called ‘The Protestant Porter’. We’ll check-in at ‘The Camden Court Hotel’. Dinner this evening will be at ‘The Monto Restaurant’

Day 6 - Friday, after a full Irish Breakfast at ‘The Brehon Hotel’, we will board our coach and head West on the Dingle Peninsula. We will board our coach and go a couple of miles west to Dingle Town! The Blair Boys have won awards across Ireland and in the U.S. for their culinary excellence.

Day 8 - Sunday, After a full Irish breakfast we will check-out of ‘The Brehon Hotel’, and head South towards Cork. In Cork City, we will visit The envy of foodies throughout Ireland, the English Market has been around since 1788. Far from being English (it’s named for its Protestant origins), this is the place to pick up traditional specialties like drisheen and pigs’ trotters, although the 55 or so stalls also stock bread, fish, cheese and fruit and veg. The market has survived fire, civil war and an attempted name change, but it took a failed bid to replace it with a parking lot in the 1980s for the people of Cork to realize that their culinary capital was worth saving! Today hailed as the "best covered market in the UK and Ireland" by chef Rick Stein, the English Market is thriving. Drop into the Farmgate Café for delicious dishes made from the market’s wares. When we leave the English Market we will check-in at ‘The Kingsley Hotel’. Dinner tonight will be at the Kingsley Hotel..
